We have full-time permanent positions available for Indian Curry Chef/Cook, Tandoori Cook, and Indian Cuisine Chef (sous) at Roshni Indian Restaurant, located in Mackay, QLD. Candidates must have experience in Indian cuisine. Visa sponsorship is available for candidates with the right qualifications, along with a generous salary package ranging from $70,000 to $75,000, depending on experience.

Indian Curry Chef/Cook should have a full operational knowledge of all recipes, standards, portion sizes, and presentation styles of dishes produced within the kitchen. They should also assist in the creation of menus, discuss food preparation issues with the manager and other staff, and monitor the preparation and presentation of dishes. They should work with management to set daily and weekly production levels for the kitchen and maintain stock levels according to the requirements of the business. They should ensure compliance with food hygiene standards and health and safety requirements, check the freshness and quality of ingredients, and ensure that the food prepared in the kitchen is of the highest possible standards. They are also responsible for the supervision and training of junior staff, dealing with food complaints efficiently, and demonstrating strong organizational skills. Additionally, they should be able to prepare curries, sauces, and desserts as and when required.

Tandoori Cook should have experience operating traditional tandoor ovens and cooking such items as meat and bread. They should also prepare curry, sauce, and dessert as per standard and style set by the Head Chef(s). They should be able to regulate temperatures of tandoor ovens, grills, burners, pans and other cooking equipment and demonstrate a thorough understanding of traditional North Indian cuisine, including desserts. They should store food in temperature-controlled facilities and ensure the correct preparation and presentation standards of the dishes are maintained at all times. They should demonstrate tandoor techniques and cooking procedures to other staff if required, check on food supplies, and advise the supervisor of any requirements. They should also ensure that all the equipment used in the section is in good condition and hygienically cleaned before and after use. Additionally, they should be able to demonstrate strong organizational skills.

The required qualifications for Indian Curry Chef/Cook and Indian Cuisine Chef (sous) are Cert III in Commercial Cookery plus 3 years of experience or Cert IV Commercial Cookery plus 2 years of experience. The required qualifications for Tandoori Cook are Cert III in Commercial Cookery plus 2 years of experience.
